For something special to drink and match with most of your holiday foods, let’s go to northeastern Italy’s vineyards surrounding the city of Verona. This is actually Romeo and Juliette country, so everything about the region tends to conjure up a bit of romance. Valpolicella Ripasso, a seductive dry red blend of local Corvina, Molinaro and Rondinella grapes, is at home here. It’s made by creating a second fermentation through adding the pressed skins from premium Amarone production to the Valpolicella base wine. Ripasso means a second pass. This generates a little more alcohol but also results in a smooth, rich red wine with more concentration of flavours. Valpolicella actually means valley of many cellars referring to the fact that most families in the past would have a wine cellar, make their own wines and not be dependent on larger wineries which is the case today. The Cottini family, consisting of dad Diego, mom Annalberta and sons Matteo and Michele, are Valpolicella specialists. In the third generation, they work 140 hectares of prime, eco-sustainable, bio-diverse vineyards.
